Hungarian Lecsó with chorizo, mushrooms and courgette




1 large onion, chopped
3 tbsp olive oil
4-5 large bell peppers (green, yellow, orange, red), cut into finger-width strips or rings
5 mushrooms, sliced
1 courgette, sliced
3 large peeled tomatoes, chopped
3 cloves garlic, chopped
1⁄2tsp chili
1 chorizo sausage, sliced into thin ring
2 tsp sweet paprika
salt, pepper
fresh basil
seeds for decoration (optional)

In a large frying pan, saute the onions& garlic in olive oil, approx 2 minutes.
Add sliced sausage, paprika& chilli and cook, mixing with onions& garlic for approx 5 minutes.
Add peppers, courgette and mushrooms and mix well together.
Add salt and pepper, to taste.
Turn heat down and add Tomatoes.
Let simmer until the peppers are soft.
Serve with fresh basil and sunflower or pumpkin seeds.
