Cakes with salmon and spinach

1 packet of spinach (chopped)

1/2 packet of kale (chopped)

200g smoked salmon

parsley (chopped)

3 eggs

7-8 tbsp flour

juice from half of a lemon

1 garlic clove

1/2 tsp baking soda

salt, pepper

clarified butter for frying

 

Preparation:

Chop all the greens ( spinach, kale, parsley) and mix in a bowl with eggs and chopped salmon. Add baking soda and mix it together gradually adding the flour.

The mixture should have thick consistency. At the end add lemon juice, grated garlic and season to your taste.

Heat a pan and fry spoonfuls of the batter mix until golden and cooked through.
