courgette, butter bean and feta cheese cakes












2 courgettes

1 onion

1 garlic clove

2 eggs

3 tbsp plain flour

70g crumbled feta cheese

fresh chives, chopped

150g tin butter beans, drained

salt and pepper

olive oil


Coarsely grate courgettes, then scoop up the pieces in your hands and firmly squeeze all of the liquid from them. Chop onion, garlic and chives. In a large bowl, roughly mash the butter beans, then add the courgettes, onion, garlic, feta and chives. Mix together well. Add eggs and flour and season. Heat a non-stick frying pan and fry spoonfuls of the batter mix, cook  2 to 3 minutes on each side, or until golden and cooked through. Serve with tzatziki or salsa sauce.
