Buttery fork cookies




125g unsalted butter, softened
125g caster sugar
1 large egg yolk
100g plain flour
1 ts ground cinnamon

Preheat the oven to 200 degrees. Lin a large baking sheet with baking paper. Place the butter and 25g of the sugar in a large bowl and beat together until light and fluffy. Add the egg yolk and mix together, then sift in the flour and mix to form a soft dough. Mix the remaining sugar with the cinnamon. Take a teaspoon of dough and roll it in the sugar mixture. Place on the baking sheet and use a fork to press down until the cookie is 1 cm thick. Repeat until all dough is used up. Bake in the preheated oven for 10 minutes, or until golden brown. Leave to cool on a wire rack.
