cranberries and white chocolate cookies




225g butter, softened
140g caster sugar
1 egg yolk, lightly beaten
2 tsp orange juice
280g plain flour
pinch of salt
110g dried cranberries
25g white chocolate chips

Preheat the oven to 190 degrees. Line 2 large baking sheets with baking paper. Place the butter and sugar in a large bowl and beat together until light and fluffy, then beat in the egg yolk and orange juice. Sift together the flour and salt into the mixture, then add the cranberries and chocolate chips and stir until combined. Scoop up tablespoons of the dough and place them on the baking sheets, spaced well apart. Bake in the preheated oven for 10-15 minutes, or until light golden brown. Leave to cool on the baking sheets for 5-10 minutes, then transfer the cookies to the wire racks and cool completely.
