carrot pancakes




600g carrots, grated
2 eggs
110g plain flour
1 red chilli, finely chopped
1 garlic clove, chopped
1 red onion, chopped
salt and pepper
olive oil
1 spoon of honey (optional)

natural yogurt
fresh dill, chopped

Mix yogurt with chopped dill and some pepper. In a bowl combine grated carrots with onion, garlic, eggs, chilli and flour, season. Add some honey if desired.
Cook slowly over medium heat until golden brown, crisp and cooked through. Allow to drain on paper towels. Serve piping hot with the yogurt sauce:)
