Jablecznik – Polish apple cake






240g all-purpose flour
1 cup sugar
2 teaspoons baking powder
120g butter
5 large egg yolks

6 large tart apples
1 tablespoon sugar
1 teaspoon cinnamon

Meringue Topping:
5 large egg whites
10 tablespoons sugar

To make the dough: In a large bowl, whisk together flour and baking powder. Cut in the butter to resemble coarse crumbs. Mix in egg yolks and sugar just until well combined. Wrap in plastic and refrigerate for 1 hour.

To make the filling: Heat oven to 350 degrees. Coarsely grate apples and cook them with 1 tablespoon sugar, 1 teaspoon cinnamon and a little water until tender and liquid has evaporated. Cool to room temperature.

Remove dough from refrigerator and roll out 2/3 (return 1/3 to refrigerator for topping) and fit into the bottom and part way up the sides of a lightly greased 13×9-inch pan. Place cooked apples onto pastry crust.

To make the meringue: In a medium bowl, whip egg whites until stiff. Gradually add 10 tablespoons sugar, whipping constantly until stiff and glossy. Spread evenly over apples. Remove reserved 1/3 dough from refrigerator and coarsely grate over meringue. Bake 40 minutes or until golden.
