stuffed courgette, salmon and ricotta rolls
Very simple, light and easy to prepare dish:)
3 large courgettes, ends trimmed
4 tbsp olive oil, plus extra to drizzle
150g ricotta cheese
1tbsp grated unwaxed lemon zest
3 fresh chillies (red and green) finely chopped
200g smoked salmon
Slice courgettes lengthways into 12 strips 1/4 cm thick. Brush with olive oil.
Preheat griddle pan until smoking and add courgettes slices in batches. Cook each side for 2-3 minutes.
Mix ricotta with lemon zest, chillies and season to taste.
Trim salmon into 12 slices, and lay each strip on top of the courgette slices. Place 1tsp of ricotta mixture on one end of a courgette and smoked salmon strip and roll up.
Arrange rolls on the plate and season. Drizzle with olive oil and serve.
