*chicken breasts with skin or chicken legs
*1 tbls olive oil
*100g pitted green olives
*lemon zest, lemon juice
1. Chop the chicken in half and pan fry in olive oil until browned.
Transfer to a casserole dish. Add the olives, 1 halved lemon, juice from 1/2 a lemon and lemon zest.
2. Bake for 25-35 mins until the chicken is cooked through.
